Leftover Mashed Potato Pancakes (Paleo/SWYPO Whole30/DF/GF Latkes)

It’s several days after Christmas and my house is full of guests…..and takeout boxes. You see, our visitors have wanted to go out to eat at the local places. It completely makes sense, but has meant that our Christmas leftovers have gone relatively untouched until last night. I made my first batch of Instant Pot Turkey Bone Broth (link here, it turned out awesome!) and this morning woke up with a resolve to repurpose something else of our Christmas leftovers.

Almost immediately, the thought of a “leftover mashed potato pancake” with some eggs on top sounded like a tasty brunch. I decided that since the mashed potatoes I’d made were Whole30, that this recipe woud be too. I hate that the term “pancake” is used because that immediately takes the recipe into SWYPO territory. Not sure what SWYPO is? Click here for the Whole30 explanation of SWYPO.  It’s really a latke, but just to be safe I’d prefer to refer to these as “Paleo” as not to confuse anyone. These leftover mashed potato pancakes are the perfect way to repurose those leftovers!

a tasty way to repurpose leftover mashed potatoes into a delicious side dish for any brunch, lunch, or dinner!

Instructions
  1. Put the mashed potatoes into a medium sized bowl. Crack the eggs in and stir in thoroughly.
  2. Add in the spices and green onions. Mix to combine.
  3. Mix in the coconut (or other alternative) flour one tbsp at a time until a dough can be formed.
  4. form a patty/pancake in your hand and pan fry in cooking fat of choice (I used bacon grease) over medium high heat for 4-5mins. Do not touch once placed down - this allows the crust to form nicely.
  5. Flip the cakes and cook for an additional 4-5 minutes. Serve immediately. Pairs well with eggs for brunch, or any meat as a side.

Grocery List 4/13/17 + Meal Planning (Whole30-ish)

 

Hooray, it’s officially my weekend! My work has tomorrow as a holday, which is perfect because Riley’s daycare is closed. We had to buy a few more items than I’d hoped, but this week the grocery list was still pretty good. I narrowly escaped an impulse purchase at Sam’s Club (their clothing section is a danger zone. Stay away!). Also, we are preparing for Easter Weekend. In fact, a recipe is going to come out of this grocery list. So if certain items seem out of place, this is why 🙂 Anyways, here’s what I bought for the week!

From Aldi:

  • Chocolate chips
  • potatoes
  • 2 dozen eggs
  • mushrooms (2)
  • orange juice
  • spinach
  • bacon
  • moscato
  • frozen veggies
  • lemon-lime soda
  • pork butt
  • frozen peaches
  • frozen strawberries
  • onions

Local Health Store

  • Coconut aminos – so expensive, but SO necessary for flavor.
  • Hawaiian sea salt

note:  I got a very small amount of the hawaiian sea salt in the bulk section. This is for a specific recipe and I knew I wouldn’t use up a 1lb bag (which run about $20, yikes!) so I just bought a few tbsp, which was a little over $1 🙂

Sam’s Club

  • Peanut butter pretzels – Travis wanted this for his Easter treat lol
  • Smoked Turky Deli Meat – surprisingly great ingredients! Not Whole 30, but a great “Food Freedom” item.
  • Chicken
  • Coleslaw

Other:

  • a pitcher…We literally didn’t own one. We’ve talked about buying one for when people are over but it hasn’t happened.  I ended up getting one at Target on sale and with a gift card for $4 out of pocket. Of course once I got home realized I probably should’ve checked Goodwill. But it’s very pretty and sturdy so I’m keeping it.

Meal Plan Ideas

  • steaks, potatoes, and coleslaw
  • Easter Dinner w/ in-laws
  • Potatoes and eggs
  • spaghetti (will need to get zucchini later)
  • nomnompaleo’s slow cooker kahlua pig – fyi this was the recipe I needed the hawaiian salt for. I completely trust her judgment!
